Ok folks, they aren’t famous but they are super easy to make and very easy to modify with your favorite ingredients. This batch made 18 burritos. That’s 18 lunches made in about 45 minutes! So simple for when you’re on the run. Here is how I made them this time:
2 lbs ground beef (or ground turkey, shredded chicken, tofu, etc.)
1 1/2 cups water
1/2 cup taco seasoning
2 cans refried beans
1 can black beans (or pinto)
1/2 bag of frozen corn
2 cups cooked rice
1 can sliced olives
1 cup salsa
18 10″ tortillas
1-2 cups shredded cheese
First, brown your meat
Add 1 1/2 cup water and 1/2 cup taco seasoning and simmer for 5 minutes.
Stir in the 2 cans of refried beans.
Stir in the can of black beans.
Stir in the frozen corn.
Stir in the cooked rice.
Stir in the can of sliced olives and 1 cup salsa.
Now, how to assemble the burrito!
First, scoop a large spoonful of burrito mix onto your tortilla.
Sprinkle the top with shredded cheese.
Pull up the bottom of the tortilla to wrap up and under the mix.
Now, fold the two sides towards the middle and roll!
The next step is how I store them. Because I make these as a “grab and go lunch” option for my hubby, I try to store them as thoroughly and efficiently as possible.
First I wrap the burrito in foil.
Then I store them (four at a time) in gallon size freezer bags.
